An ever-changing menu may begin with sauteed quail covered with brioche and black trumpet mushrooms, doused with a port reduction and served with bleu cheese pudding. A standout entree is the sauteed whitefish and blood sausage boudin served with white bean emulsion, Brussels sprouts, and apples.
