Red walls adorned with black and white photos pave the way for tasty combinations of Latin and Indian cuisines. A tapas menu favors Indian spices with dishes such as lamb chops marinated in a spiced lentil blend, grilled and served atop a mint-imbued red onion salad. Entrees showcase the fusion idea with dishes such as tandoori shirt steak served atop garlic spinach and accompanied by fried plantains, and blackened tamarind ribs served with sweet corn salsa and yucca fried. Every Friday evening, Vermilion is pleased to host DJ Sergio Pires for World Music Fridays. From 6 to 11 p.m., DJ Sergio will spin eclectic and sophisticated sounds, fusing Brazilian beatswith jazz, rock, reggae and funk. Patrons can enjoy his musical stylings while sipping Vermilion's signature Herb and Spice cocktails and enjoying tapas in the restaurant's welcoming lounge area, or while indulging in dinner in the fashionable dining room. Featuring the concept and flavors of Founder/Owner Rohini Dey and Executive Chef Maneet Chauhan, Vermilion recently evolved to evoke a Deeper, Bolder synergy of Indian and Latin cuisine. The restaurant is open for lunch on weekdays from 11:30 a.m. to 2:30 p.m. Dinner is served Sunday through Thursday from 5 to 10 p.m. and Friday and Saturday from 5 to 11 p.m. The Vermilion Lounge is open during restaurant hours and late night for special events. The restaurant seats 250, with an 18-seat outdoor patio open seasonally.
